Layered avocado with curried crab
A s avocado comes in season, we bring you a nutritious, fruity dish from Chef Bouby: avocado and curried crab!
Ingredients: serves 4
· 2 avocado · 200g crabmeat ·2 tsp mayonnaise · 1 tomato, diced · 1 lemon juice · 1 head of lettuce · salt and pepper to taste · fresh coriander to taste, chopped · 1 pinch each turmeric and curry powder
- Mix crab meat with mayonnaise, curry and turmeric powder. Season to taste. - Mash avocado. Add tomato, coriander, lemon juice, salt and pepper. - Create a ring of lettuce. Place the first layer of avocado on top, followed by crab mixture. Repeat twice. - Decorate as you wish.
