A s av­o­cado comes in sea­son, we bring you a nu­tri­tious, fruity dish from Chef Bouby: av­o­cado and cur­ried crab!

In­gre­di­ents: serves 4

· 2 av­o­cado · 200g crab­meat ·2 tsp may­on­naise · 1 tomato, diced · 1 lemon juice · 1 head of let­tuce · salt and pep­per to taste · fresh co­rian­der to taste, chopped · 1 pinch each turmeric and curry pow­der

Method:

- Mix crab meat with may­on­naise, curry and turmeric pow­der. Sea­son to taste. - Mash av­o­cado. Add tomato, co­rian­der, lemon juice, salt and pep­per. - Cre­ate a ring of let­tuce. Place the first layer of av­o­cado on top, fol­lowed by crab mix­ture. Re­peat twice. - Dec­o­rate as you wish.
