HOW TO GAUGE FOOD TRAVEL?
Gastronomy is the second reason people travel to Latin America, according to the World Tourism Organization (UNWTO). However, there are no tools that can prevent, gauge or control the negative impacts on the travel destinations, including food insecurity, gastronomic cross-crossing and health safety. That explains the need on the part of specialized entities, such as observatories or certain academic institutions, to come up with quantitative and qualitative gastronomic and travel indicators.
