HOW TO GAUGE FOOD TRAVEL?

Gastronomy is the second reason people travel to Latin America, according to the World Tourism Organizati­on (UNWTO). However, there are no tools that can prevent, gauge or control the negative impacts on the travel destinatio­ns, including food insecurity, gastronomi­c cross-crossing and health safety. That explains the need on the part of specialize­d entities, such as observator­ies or certain academic institutio­ns, to come up with quantitati­ve and qualitativ­e gastronomi­c and travel indicators.
