What do you do?
We have just opened Choccas Bright. We specialise in artisan panned chocolates. All our products are handcrafted onsite, rolling Australia’s finest fruits and nuts in premium European couverture chocolate. We also do coffee and sell ice cream.
How did this idea come about?
I’ve been at Mark for a couple of decades to make chocolate. When we saw Bright Chocolate finish up that was a big impetus for us to press a bit harder. I did a chocolate making course and then we spent quite a while looking for a commercial space to become available. We love the tourism vibe and just the vibe in general in Bright, everyone is happy and relaxed and businesses are supportive of one another. What have you done for work previously?
We’ve gone quite a few things. We’ve grown pistachio nuts, been vignerons, ran tourist accommodation, been gelato makers and I’m also a qualified accountant.
Have you always lived in the North East?
Yes. We were first on the Border and have slowly been moving further south every few years. We went from Lavington to Wodonga, then Allans Flat, Beechworth and now Bright.
What do you do in your spare time?
Spend time in the garden. We haven’t moved to Bright yet but when we do, we’re looking forward to enjoying the river and being able to do some bush walking.
