What do you do?

We have just opened Choc­cas Bright. We spe­cialise in ar­ti­san panned choco­lates. All our prod­ucts are hand­crafted on­site, rolling Aus­tralia’s finest fruits and nuts in premium Euro­pean cou­ver­ture choco­late. We also do cof­fee and sell ice cream.

How did this idea come about?

I’ve been at Mark for a cou­ple of decades to make choco­late. When we saw Bright Choco­late fin­ish up that was a big im­pe­tus for us to press a bit harder. I did a choco­late mak­ing course and then we spent quite a while look­ing for a com­mer­cial space to be­come avail­able. We love the tourism vibe and just the vibe in gen­eral in Bright, ev­ery­one is happy and re­laxed and busi­nesses are sup­port­ive of one an­other. What have you done for work pre­vi­ously?

We’ve gone quite a few things. We’ve grown pis­ta­chio nuts, been vi­gnerons, ran tourist ac­com­mo­da­tion, been gelato mak­ers and I’m also a qual­i­fied ac­coun­tant.

Have you al­ways lived in the North East?

Yes. We were first on the Bor­der and have slowly been mov­ing fur­ther south ev­ery few years. We went from Lav­ing­ton to Wodonga, then Al­lans Flat, Beech­worth and now Bright.

What do you do in your spare time?

Spend time in the gar­den. We haven’t moved to Bright yet but when we do, we’re look­ing for­ward to en­joy­ing the river and be­ing able to do some bush walk­ing.
