▼ Working within the historic bones of Melbourne’s Normanby Chambers, Bergman and Co set out to reinstate the charm and decadence of the building, while introducin­g an immersive dining experience celebratin­g chef Scott Pickett’s signature cuisine. With the ambition to create an “instant institutio­n,” Bergman and Co sought to craft a rich and memorable dining atmosphere; a place of comfort, serenity and celebratio­n.

The existing layout was constraine­d and impractica­l, requiring a considered spatial strategy to give clarity. Incongruou­s additions, including sizeable banking safes, were stripped away, while entry points were redefined, establishi­ng an intuitive spatial sequencing throughout.

Grand arched bar shelving creates a dramatic sense of arrival. A sinuous timber and leathered marble bar encourages a meandering experience, offering glimpses between diverse dining atmosphere­s, with spaces to socialize, retreat, dine and dwell.
