Sal­tah is widely eaten in north­ern Ye­men and mainly served for lunch. The base is a brown meat stew, or maraq, a dol­lop of fenu­greek froth, and sa­howqa (a Ye­meni salsa). It is tra­di­tion­ally eaten with rice and Ye­meni flat­bread, which serves as a uten­sil to scoop up the food.
