Made from buckwheat flour, soba is a traditiona­l noodle dish made in Japan and usually a representa­tive of Japanese cuisine alongside sushi. These chewy, nutty-flavoured noodles are native to Japan, and are traditiona­lly eaten on New Year’s Eve as a symbol of longevity.
