Made from sweet potato starch, dangmyeon is also known as glass noodles. These noodles are most commonly used in japchae, a popular colourful Korean noodle stir-fried dish of vegetables and meat. The chewy, rubbery and springy texture of dangmyeon complement­s the strips of beef and vegetables such as carrots, mushrooms and onions.
