Glorious Laksa!

In Southeast Asia, you can’t talk noodles without talking laksa.

A spicy noodle soup popular in Peranakan cuisine, it consists of thick wheat noodles or rice vermicelli with chicken, prawn or fish, served in spicy soup based on either a rich and spicy curried coconut milk or sour asam (tamarind), or a combinatio­n of both. Laksa can be enjoyed in Indonesia, Malaysia, Singapore, and Southern Thailand. Curried variants include the Katong laksa of Singapore, Nyonya laksa of Malaysia, laksam of northeast Malaysia, Bogor laksa of Bogor, Indonesia, and Thai laksa, amongst others. Asam variations include Malaysia’s famous Penang laksa and Ipoh laksa, as well as Medan

laksa of North Sumatra, Indonesia. The Sarawak, Kelantan, Johor, Terengganu, and Tambelan laksas are a fusion of both types, and can be found in the respective cities they are named after.
