It is said that japchae (fried sweet potato noodles) was invented in the 17th century, and was, as per the translatio­n, a dish of mixed vegetables. However, today, the dish is better defined by its sweet potato glass noodles, and also includes seasoned beef or pork slices. It is often served as a side dish, but sometimes eaten with rice as a main meal.
