Commonly referred to as Japanese rice wine, sake is an alcoholic beverage made by fermenting rice that has been polished to remove the bran. Because sake is less acidic than wine and contains more amino acids, it pairs well with many different types of food. However, it is believed that the best way to enjoy it is alongside traditiona­l Japanese dishes like sashimi, sushi, or tempura.
