SUMMERTIME PEACH & PROSECCO TIPPLE
Make six thin rockmelon strips 2cm wide by 12cm long using a peeler, then weave them onto cocktail skewers. For freshness, pop a large halved peach into a Vitamix just before serving and puree until fine. Add two teaspoons of puree to each glass with a rockmelon cocktail skewer, then top slowly with Prosecco.
