Morn­ing­ton Penin­sula distillery Bass & Flin­ders cre­ates a range of gins in­clud­ing the cherry- and rasp­berry-in­fused Cerise Gin, which Mel­bourne prove­dore Vic­to­ria Mill uses to cre­ate this play­ful cock­tail. “[It] shines through with Turk­ish de­light un­der­tones,” says owner Jack McEwan. “Adding egg whites gives you a fluffy foam on top like a lovely pavlova.”
