When Westerners think about Chinese food, they often imagine one distinct cuisine, as opposed to a dizzying range of regional dishes and flavours. In tonight’s episode of this food travel show, chef Adam Liaw (pictured right) continues his culinary adventure across China with a visi tto the provinces of Jiangsu and Zhejiang, north and south of Shanghai respectively, both considered part of the eight great regional cuisines. Adam begins his journey in the city of Jinhua, in search of one of the region’s most cherished ingredients – ham.
