Where did this recipe come from?

Dur­ing my time as a hote­lier in south-west France, this was one of our most pop­u­lar recipes. My part­ner some­times helped with the cook­ing, and this was one of his spe­cial­i­ties: be­ing a last-minute kind of per­son, he learnt to make the whole thing within half an hour, from start to fin­ish. The orig­i­nal recipe came from New Veg­e­tar­ian, a clas­sic cook­book from 2001 by the in­spir­ing Amer­i­can-born cook Celia Brooks Brown.
