Sweet potato salad

Roast 1kg sweet potato, peeled and cut into chunks for 35 mins at 200C/180C fan/gas 6 un­til ten­der and golden, then set aside to cool. Make a dress­ing by whisk­ing 5 tbsp sherry vine­gar, 2 tbsp olive oil and 2 tbsp honey with some sea­son­ing. Add 2 finely chopped shal­lots, 4 finely sliced spring onions, and a bunch of finely chopped chives. Toss the potato in the dress­ing and serve.
