I ab­so­lutely loved your ‘cre­ate your own spice blend’ recipes (Septem­ber). I’ve been mak­ing my own fa­jita mix for ages and, as you’ve pointed out, most of these spice mixes are made from what any­one with an in­ter­est in cook­ing al­ready has in their spice drawer. It’s easy to pick up pack­ets or jars, but these of­ten have not-so-nat­u­ral ad­di­tives in them. If you make them at home, you know what you’re eat­ing, plus there’s less packet waste and it’s cheaper! I made hoisin sauce last week, which I would never have thought to do be­fore.
