I absolutely loved your ‘create your own spice blend’ recipes (September). I’ve been making my own fajita mix for ages and, as you’ve pointed out, most of these spice mixes are made from what anyone with an interest in cooking already has in their spice drawer. It’s easy to pick up packets or jars, but these often have not-so-natural additives in them. If you make them at home, you know what you’re eating, plus there’s less packet waste and it’s cheaper! I made hoisin sauce last week, which I would never have thought to do before. I look forward to more features that show how easy it is to make your own blends. Katherine Jamieson, Shetland
