Christ­mas pud­ding ice cream

Whizz 1 litre vanilla ice cream in a food pro­ces­sor un­til smooth, fold in 200g crum­bled Christ­mas pud­ding (you can buy in­di­vid­ual ones or put left­overs to good use) and scrape into a freezer-proof con­tainer. Freeze for at least 2 hrs. To serve, scoop into bowls and top with a splash of caramel sauce or booze. Serves 4-6
