We’re just at the end of the ro­manesco sea­son now, also called ro­manesco broc­coli or ro­manesque. This bright green bras­sica is a bit of a show-off with its in­tri­cate frac­tal flo­rets but cooks like stan­dard cauliflower. It’s just a notch sweeter and nut­tier in flavour.
