Katsu curry is a won­der­ful batch cook recipe. Dou­ble the quan­ti­ties for the curry sauce and katsu chicken or tofu and freeze sep­a­rately for up to two months. De­frost the pro­tein overnight in the fridge be­fore cook­ing, and ei­ther de­frost the sauce in the mi­crowave or fridge be­fore warm­ing through. Keep some pack­ets of cooked rice in the cup­board and you’ll have din­ner on standby when­ever you need it.

Cook­ing for lit­tle tums?

This is a great dish for ba­bies and tod­dlers who are get­ting used to solids. Use mild curry pow­der and re­duce the amount to 1 tsp. Chop the chicken or tofu into lit­tle nuggets and serve the car­rot and cu­cum­ber in slim ba­tons.

Easy way to 5-a-day

Swap the tofu for thin slices of aubergine to in­crease your veg in­take and stir 1 tbsp of peanut but­ter into the sauce for added pro­tein.
