“The most obvious thing that people don’t do when they’re cooking is tasting throughout the process. Cooking without tasting is like driving with your eyes closed. A good chef will taste instinctively and adjust accordingly. My most-asked question to my students is: ‘What does it taste like?’ You should never serve food you haven’t tasted yourself.”
