Mashed potatoes

Peel and cut 800g potatoes into chunks, then put in a large pan and pour over enough cold water to cover them by 5cm. Add a good pinch of salt. Bring to the boil, lower the heat and simmer until tender, about 10-15 mins. Drain well and mash with 2 tbsp unsalted butter and 150ml reduced-fat soured cream. Season to taste.
