Quick after-school snacks

Keep hunger pangs at bay until dinner time with these quick and nutritious bites.

● Apple doughnuts Slice an apple into discs, about 1/2cm thick, through the core. Use a small cookie cutter or apple corer to make a hole in the centre and remove any pips. Spread cream cheese over the slices, and top with raisins, flaked almonds or sprinkles.

● Cucumber ‘sandwiches’ Peel a chunk of cucumber and cut into 1/2cm slices. Sandwich two pieces together with a little ham or cheese (or both), and secure with a cocktail stick.

● Oatcakes with mackerel or salmon paté Mash some flaked smoked mackerel or hot smoked salmon with a few tablespoon­s of natural yogurt, mayonnaise or cream cheese, then add a twist of pepper and some lemon zest, if you like. Spread over oatcakes.

● Yogurt bark Spread some natural yogurt over a tray lined with baking parchment – don’t make it too thin. Scatter over some halved raspberrie­s and blueberrie­s (fresh or frozen) and freeze until solid. Break into shards to serve.

● Celery boats Fill the cavities of celery batons with nut butter, and arrange some raisins on top.
