Linguine with avocado, tomato & lime
Traditional guacamole ingredients make this low-calorie linguine dish extra-special. It can also be served cold as a pasta salad.

115g wholemeal linguine
1 lime, zested and juiced 1 avocado, stoned, peeled
and chopped
2 large ripe tomatoes, chopped ½ bunch of coriander, chopped 1 red onion, inely chopped 1 red chilli, deseeded and inely
chopped (optional) 1 Cook the pasta following pack instructions. Meanwhile, combine the lime zest and juice, the avocado, tomatoes, coriander, onion and chilli (if using) in a medium bowl.
2 Drain the pasta, then toss with the veg mixture. Serve straightaway while still warm, or leave to cool and enjoy cold, if you like.
