Crispy onion rings

Slice 1 large onion into 1cm rounds, then separate the rings. Fill a deep pan no more than two-thirds full with vegetable oil and heat to 180C, or until a cube of bread dropped in turns golden within 30 seconds. Whisk 150g selfraisin­g flour with a good pinch of salt and 180ml sparkling water until smooth. Coat the onion rings in the batter, and fry in batches for about 3 mins, or until golden and crisp. Remove with a slotted spoon and drain on kitchen paper, sprinkling with some salt as soon as they come out of the oil.
