Sticky cider onion hot dogs

Melt 30g butter in a pan with 1 tbsp olive oil, and fry 2 onions, finely sliced, with a pinch of salt for 25-30 mins, or until dark and sticky. Tip in 100ml dry cider and simmer until reduced and thickened. Stir in 1 tbsp dark brown soft sugar and 1 tbsp cider vinegar. Combine 1 tbsp Dijon mustard with 2 tbsp mayonnaise in a small bowl. Cook 4 sausages following pack instructio­ns. Split 4 brioche hot dog rolls and fill each with a sausage. Top with the onions and a drizzle of the mustard mayo.
