Activate your ‘love hormone’, plus make a better-for-you pancake
SERVES 1 PREP 20 mins COOK 10 mins EASY V 70g gram (chickpea) flour 1 tbsp nutritional yeast
¼ tsp chilli flakes
¼ tsp baking powder
½ tbsp rapeseed oil
For the salsa
½ ripe avocado, finely chopped ½ small red pepper, deseeded
and finely chopped
1 lime, juiced
1 spring onion, sliced
1 tbsp chopped coriander
and a few whole leaves 1 medium tomato, finely
chopped
1 Tip the flour, nutritional yeast, chilli, baking powder and seasoning in a large bowl. Whisk to combine. Make a well in the centre and whisk in 120ml water to make a smooth batter. 2 For the salsa, gently combine all of the ingredients in a bowl and season. Chill until ready to serve.
3 Heat the oil in a non-stick frying pan over a medium heat, then pour in the batter to make a large pancake. Cook for 4-5 mins on each side. Top with the salsa and coriander leaves.
