Where it comes from

The majority (around 70%) of the world’s maple syrup comes from Canada, most often from Quebec.

How it’s made

Did you know maple syrup has a season? Between February and April, farmers extract the sugary sap from maple trees, which is then heated to evaporate o any water, resulting in a syrup.

Cost and definition

A massive 40 gallons (150 litres) of maple sap is needed to make just one gallon (3.8 litres) of syrup, which is why pure maple syrup is expensive. Always check the label to see what you’re getting as many of the cheaper options are only ‘mapleflavo­ured’, so made using cheaper sugar syrups with just a small amount of real maple syrup added.
