Easy pickled cucumber
SERVES 4 PREP 5 mins plus 2-3 hrs marinating NO COOK EASY V
100ml soy sauce
100ml rice vinegar
4 tbsp caster sugar
6 mini cucumbers
1-2 red chillies, chopped
2.5cm piece of ginger
1 Combine the soy sauce, vinegar and sugar together in a bowl.
2 Trim the ends of the cucumbers and bash them with a rolling pin until they crack. Cut each cucumber into two or three pieces.
3 Put the cucumbers and chopped chillies into a reusable food bag or container and add the soy sauce mixture. Seal and leave to marinate in the fridge for at least 2-3 hrs.
4 Peel the ginger and chop it finely into matchsticks.
5 Tip the marinated cucumbers and chillies into a serving bowl along with the marinade. Scatter with the ginger just before serving.
