Julienne is the term for cutting crisp veg, such as carrots, into uniform matchstick­s. This is done by first squaring the vegetable into a block by trimming off the curved sides, then cutting it into thick slices lengthways, and finally cutting it crosswise into matchstick­s. This delicate cut is often used when garnishing dishes, or pickling veg, where presentati­on is important.
