2.5cm piece cinnamon stick
2 green cardamom pods
1 star anise
1 bay leaf
10 curry leaves
1 onion, finely chopped
2 tbsp curry powder
2 tomatoes, chopped
3 tbsp doubanjiang (spicy
fermented bean paste)
1kg lamb neck and shoulder, minced
or finely chopped
1 tbsp finely chopped ginger
1 tbsp finely chopped garlic hummus, pickled radishes and rice, or a hollowed-out loaf of bread, to serve
