It used to be that when you ordered pink gin, you’d get dry gin with a hefty splash of Angostura bitters – a classic, bracing naval drink. Now, pink gin is a fruity, sweet, aromatic drink designed to be enjoyed with plenty of tonic or other mixers, and it’s often flavoured with fruits such as rhubarb, red berries or grapefruit. Purists may resent the change of definition, but, when done well, today’s pink gin is a great addition to the range of gins available.
