The Green Barbecue

Rukmini’s recipes always pack in flavour with minimal effort required, and she’s given meat-free barbecue recipes the same treatment here. This month, I’ll be making her inventive veg burgers, cauliflowe­r wings and crispy corn with herby butter, and maybe even attempting a grilled dessert to round it off: think cinnamon-griddled pineapple with toasted coconut. My must-try recipe: crispy gnocchi – on a stick – with charred peppers & basil pesto.

Simply Raymond by Raymond Blanc (£25, Headline Home)

Inspired by his mother’s cooking, the chef at Le Manoir spent lockdown writing this collection of uncomplica­ted family meals. There are, of course, plenty of French dishes – cod cassoulet and a tartiflett­e that looks so cheesy I want to eat it straight off the page – as well as British classics and recipes inspired by his travels. My must-try recipe: chicken

braised with white wine & mustard.

Chasing Smoke by Sarit Packer & Itamar Srulovich (£26, Pavilion)

The husband-and-wife team behind London restaurant­s Honey & Co and Honey & Smoke go on a culinary journey through the Middle East, sharing recipes cooked over fire. From tahini lamb chops to prawns in honey and coriander, these dishes will transform your summer cooking. And, if it rains, there are grill instructio­ns, too. My must-try recipe: crispy

lamb with creamy hummus.
