Baked feta salad
Use up any leftover baked feta and preserved lemon peas from p94 by crumbling the feta into a salad made with mixed grains and the peas. Dress with lemon juice and olive oil for a speedy lunch.
Beef & peanut noodles
Any leftover steak from p16
can be stir-fried with noodles, leftover sriracha dressing, peanuts and any
leftover spring onions.
Pulled chicken nachos
Make any leftover chilli from p50 go further by spooning it over tortilla chips piled onto a baking tray, then cover with grated cheese and bake until warm and the cheese has melted. Scatter with a handful of coriander.
Halloumi & roasted
veg-stuffed pittas
Reheat any leftover aubergine, halloumi & harissa skillet bake from p146 and stuff into warmed
pittas. Dot over some hummus or drizzle over some tahini that is seasoned and loosened with a little water and lemon juice.
Tandoori-ish coronation chicken
Shred any leftover tandoori chicken from p93 and mix
with mayonnaise, a sprinkling of curry powder, a squeeze of lemon juice and chopped coriander or mint. Use as a filling for jacket potatoes or sandwiches.
