A new take on a weekend roast, plus Eton mess dessert
I love a traditional roast, but since my local farmers’ market has started up again, the freshest fish I can get is on a Sunday. Given the size of the queues, I’m not alone in wanting to take advantage of the just-landed catch. It adds a bit of variety to the week’s big family meal, and this is by far the fish dish that’s most requested in my house. My fish-and-two-veg is a play on classic fish and chips, brought together with a garlic butter that my kids absolutely love. It’s also a simplified version of the cod kiev from my favourite fish chef on the planet, Tom Brown, and his restaurant Cornerstone. Tom treats fish and seafood with the respect it deserves, and though his dishes are inventive, they’re never over-complicated – just how great produce should be treated.
