GRILL UNTIL CRISPY

Try tossing broccoli in olive oil, salt and spices, then grilling until charred and crispy. This gives the broccoli a crunchy interior and crisp exterior, which is perfect tossed in grain salads or eaten with oozing burrata and lots of extra virgin olive oil.

SHRED IT

Thinly shredded raw broccoli works well as the base of a salad, too. It can be tossed with a caesar dressing, crispy pancetta and a boiled egg, or tossed with roasted tomatoes and balsamic, for a crunchy and satisfying salad that feels light and summery.

STUFF IT IN A SANDWICH

It might be a bit unusual, but broccoli has become a trendy sandwich filling. Roast or steam it, then stuff into a focaccia or panini with mozzarella or mortadella, anchovies and olive oil. Italians have been eating broccoli in their sarnies for years!
