BOOKS FOR COOKS
What Fiona Forman is cooking this month
Sea & Shore by Emily Scott (£26, Hardie Grant)
Cornwall is a hot destination this summer, but if you want to avoid the crowds, this book will transport you there. Chef Emily Scott’s food showcases the best produce the coast has to offer. Divided into the seasons, there are plenty of fish and shellfish recipes including delicious ways with Cornish crab, colourful salads, roasted meat, stews and bakes. Smart enough for the weekend but easy enough for midweek, too. Must-try recipe: Tiger prawns, chilli & parsley
Sicilia by Ben Tish (£26, Bloomsbury Publishing)
Chef and restaurateur Ben Tish explores the diverse food of Sicily with its Arab, French, Greek and Spanish influences. There are chapters on breads, fritti, fish and sweets, but I turned straight to the rice and pasta chapter, packed with cheesy pasta al fornos, ragus and hefty timballos (risotto rice baked into a ‘pie’). Must-try recipe: Lemon, parmesan, chilli & basil linguine
Spice Box by Grace Regan (£20, Ebury)
I could eat curry every day, and I love this vegan collection. Inspired by her South Indian great-aunt Dolly, Grace started Spice Box, a vegan Indian stall, which is now a popular restaurant in London’s Walthamstow. From sweet potato, shallot & aubergine bhuna to jackfruit jalfrezi and crispy tofu ‘paneer’, the recipes are a riot of colour, spice and flavour. Must-try recipe: Cashew & coconut korma
