Hand-forged knife

My favourite piece of kit is a hand-forged knife by blacksmith Dan Prendegast (prendergas­tknives.com). It’s so beautifull­y balanced and the handle so neat and comfortabl­e to hold. I have small hands and this knife is big but doesn’t feel heavy or too big. It keeps its edge for months and when I feel it going a bit dull, I simply rub the edge along my denim apron or between a stack of paper and it brings it right back. I use it for everything from chopping tiny things to carving meat. It’s so much a part of my kitchen that I feel a bit lost without it.
