BERRIES are just as prone to gravity as the rest of us, unfortunat­ely, so this baking myth is one that we can definitely leave on the shelf. Although tossing berries in a light dusting of flour will help stop their juices bleeding into a cake, there’s not much evidence that it will halt the sinking if your batter is too thin. Fruity cake recipes should have a batter that is thick enough to suspend the berries in the sponge. With muffins, help them along by spooning a little plain batter in the bottom of each case, then add the rest (with fruit mixed in) on top.
