Fruity cakes
BERRIES are just as prone to gravity as the rest of us, unfortunately, so this baking myth is one that we can definitely leave on the shelf. Although tossing berries in a light dusting of flour will help stop their juices bleeding into a cake, there’s not much evidence that it will halt the sinking if your batter is too thin. Fruity cake recipes should have a batter that is thick enough to suspend the berries in the sponge. With muffins, help them along by spooning a little plain batter in the bottom of each case, then add the rest (with fruit mixed in) on top.
