Virgin mojito

SERVES 2 PREP 5 mins EASY V

Muddle 1 tbsp sugar with a small bunch of mint leaves using a pestle and mortar. Or, do this in a bowl with the end of a rolling pin. Put a handful of crushed ice into two tall glasses. Divide the juice of 3 limes and the mint mix between the glasses. Top with soda water.

Fill a cocktail shaker with ice, then add 50ml dark rum and 50ml white rum. Scoop the flesh and seeds from 1 passion fruit and add to the shaker with the juice of 1 orange, the juice of 1 lemon, 50ml sugar syrup and 2 tsp grenadine. Shake until the outside of the shaker feels ice-cold. Fill two hurricane glasses with ice, then double-strain the drink into the glasses. Garnish with orange slices skewered onto a cocktail stick with cocktail cherries.

Coconut hot chocolate

SERVES 1 PREP 5 mins COOK 5 mins EASY V

Heat 150ml whole milk in a pan until simmering, stirring. Remove from the heat and add 25g white chocolate, chopped. Stir to melt. Return to the heat until warm. Add 25ml coconut rum. Pour into a mug. Top with toasted coconut flakes and grated dark chocolate.
