The trick to making perfect Welsh cakes

I’ve subscribed to Good Food magazine for over 20 years, and wanted to share my food love story.

I’m Welsh but moved to Scotland in 2013, bringing with me something from home.

I learnt to cook Welsh cakes with my mum when I was young, who was taught by my nan. Making them is an art – you need to warm the griddle to the perfect temperatur­e and cook the cakes for the right amount of time.

Although my nan is no longer with us, I still cook her Welsh cakes recipe on her original traditiona­l Welsh griddle. The griddle is over 50 years old and was made by my grandfathe­r at the steelworks where he worked, so it’s a treasured piece of equipment in my kitchen.

My griddle has moved houses with me several times. Welsh cakes always taste better cooked on it, and it reminds me of my family roots. My Welsh husband loves them, too!
