To be called ‘tequila’, the spirit can only be distilled in certain parts of Mexico – otherwise, it’s just an agave spirit. And, there’s so much more to it than margaritas or shots. There are multiple variants, like blanco tequila – the unaged spirit – and reposado or añejo tequilas (aged spirits). Tequilas aged in virgin or used oak barrels have woody, caramel, vanilla and dried fruit notes, making them ideal in traditionally rum- or whisky-based cocktails such as old-fashioneds.
