Alcohol-free amaretto sour

Put 100ml pineapple juice, 50ml lemon juice, 1/2 egg white, 10ml syrup from a jar of maraschino cherries and a few drops of almond extract in a blender. Pulse a few times until pale and increased in volume. If the blender is high-powered, add a few handfuls of ice and pulse twice to chill. Or, stir in the ice until the outside of the jug feels cold. Pour into glasses and garnish with maraschino cherries.
