Rye bread & chocolate mousse

If you’re using Eastern European bread, it may well already be flavoured with caraway, so you could skip the caraway seeds.

SERVES 6 PREP 20 mins plus soaking and chilling COOK 40 mins

EASY V 300g day-old dark rye bread, cubed 1/4 tsp caraway seeds, toasted and

crushed (optional)

125g light brown soft sugar

1 tbsp fine semolina

250ml apple juice

100g dark chocolate, plus extra

to serve

200ml double cream, whipped

to stiff peaks
