QUICK WAYS TO USE THEM
ADD TO TZATZIKI
Give tzatziki a twist by adding grated courgette in replacement of the usual cucumber. It lends a robust texture and fresh flavour complemented by chopped mint and dill. Serve with lamb and flatbreads.
GET GRIDDLING
Use a veg peeler to pare long strips of courgette, then fry on a hot griddle pan for 1-2 mins before tossing with a little oil, lemon juice and pine nuts, if you like. Crumble over some feta for a quick summery side dish.
USE THE FLOWERS
If you’re growing courgettes in your garden, you’ll notice their yellow flowers. Add these to salads, or stuff with ricotta or goat’s cheese and lemon zest, and fry in a tempura batter before drizzling with honey. A lovely starter.
