◆ spring onions
Champ
Mash potatoes with butter, a splash of milk and seasoning, then stir through sliced spring onions. Serve as a side dish
with pies or casseroles.
Cheese & onion omelette
Fold spring onions and grated cheese through beaten eggs before frying for
a quick omelette for one.
Soy dressing
Fry chopped spring onions in hot oil with chopped ginger and sliced red chilli. Leave to cool, then add soy sauce to taste. Use as
a dipping sauce or dressing.
Charred spring onions
Rub with olive oil, then barbecue or griddle
until lightly charred. Serve as a side or roughly chop and toss through a salad.
