Frozen mango daiquiri
Make this grown-up slushy for a treat on a hot day – it’s so smooth and scoopable, you could serve it with a spoon.
SERVES 1 PREP 5 mins EASY V 50ml white rum
25ml mango liqueur or mango gin 10ml lemon juice
1/2 ripe mango, peeled, stoned and cut into chunks (130-150g prepared weight), plus a wedge to garnish (optional) ice
Thai basil sprig, to garnish
(optional) 1 Put the rum, liqueur or gin, lemon juice, mango flesh and a generous handful of ice in a high-powered blender that’s suitable for crushing ice.
2 Blend until smooth, then pour into a large cocktail or margarita glass and garnish with a mango slice and Thai basil, if you like.
