Heat the oven to 140C/120C fan/ gas 1. Wash the jars in hot, soapy water, then rinse well and place on a baking sheet. Put in the oven and leave for about 15 mins, or until they are completely dry. (If using Kilner jars, boil the rubber seals for about 5 mins instead, as dry heat will crack them.) Fill the jars with the jam while it’s hot.
