MAKES 500-600ml pot (serves 1-2) PREP 5 mins COOK 5 mins EASY V
Fill a large teapot with boiled water and set aside. Bring 600ml water to the boil in a pan with a cinnamon stick. Turn off the heat, add 2 tsp assam tea leaves and leave to steep for 1-2 mins. Remove the cinnamon stick. Empty the teapot and strain the tea into it. Serve with honey to sweeten, if you like.
