Arriving later in the year than the sweeter plum varieties, damsons can be found wild in hedgerows but the season is short and, once picked, they need to be cooked quickly before spoiling. Damsons are too sour to eat on their own but are fabulous in jam, or can be turned into a ‘cheese’ similar to quince paste to serve with regular cheese, game, pork or duck.
