Breadcrumb­s

Chilli crumbs

Mix 1 finely chopped red chilli with 50g breadcrumb­s. Fry over a low heat for 5 mins in 2 tbsp olive oil until golden. Scatter over pasta or soups.

Garlic breadcrumb­s

Mix 2 finely grated garlic cloves with a handful of parsley leaves, finely chopped, and 50g breadcrumb­s. Scatter over pasta bakes and casseroles.

Lemon & parmesan crust

Mix 25g finely grated parmesan and the zest of 1 unwaxed lemon with 50g breadcrumb­s. Use to coat chicken or pork, or sprinkle over fish before roasting.

Spiced crumbs

Mix 50g breadcrumb­s with 1/4 tsp each ground turmeric, ground cumin, ground coriander and cracked black pepper. Use as a breadcrumb coating for chicken or pork.
